Quinoa Salad

You will need:

2 cups of cooked quinoa 
1 red pepper diced
1 bad of match stick carrots 
1 Green onion chopped
1 cucumber diced
2 cups of cherry tomatoes diced
1 can of sweet corn

Mix all ingredients in large bowl.
Top with sauce below. Let mixture sit in fridge for an hour. Serve. 
Optional-we topped ours with avocado when we served it. 


Dressing
2/3 cup of honey
1 cup cilantro 
1/2 cup lime juice
1 TBSP minced ginger
1 TBSP minced garlic
1/4 cup olive oil
1/4 cup balsamic vinegar 

Place all ingredients in blender and mix on high for 1 minute
